Who created the structures seen in Minecraft? Who built the Temples, the Fortresses, the Cities? There is no "true" answer to this. By the design of Mojang, no specific builder was told of.
But let us imagine, for a moment, that there was a civilization long, long ago, living there and building the structures we all have seen. What about before that? How did they get here? And what about after that? Where did they go? These are the questions I will attempt to answer. And by "attempt" to, I mean I will tell you a story containing answers that may or may not be true.
Shall we begin?
(Okay this may be too serious? I'll try to finish it up in 7-8 chapters.)

Chapter 1
Of course, though very old, the Ancients were not the oldest. There were many before them, and would be many after them. Their immediate predecessors were the Pigmen. The Pigmen were very adept at shaping and using gold, and even more so at finding it underground. Members of their race were also highly skilled lightning mages, able to summon or redirect lightning bolts at will. They were also very kind and forgiving, and did not hurt anything if they could help it. They were the inhabitants of the world long before the Ancients got there, and had constructed cities and castles, all made of gold.
When the Ancients, having traveled from far away, through swamps, over mountains, and across oceans, arrived at the largest of the Pigmen's castles, they were accepted as residents of the castle by the Pigman king. Several things were explained to them then, such as the giant spiders that would attack at night, and the effects of golden apples, golden carrots, and glistening melons. The Ancients, highly impressed by the Pigmen's abundant use of gold, suggested that it be used as a currency. The Pigmen, while usually accepting of new ideas such as this, were heavily offended by the notion of using their gold as simple money. They politely refused, but, in contrast to their politeness, banished the Ancients from the Pigman territory. The Ancients, with nearly nothing in the ways of weaponry or food, found shelter in a secluded cave, and began mining for gold.
Here they made two discoveries: 1. Gold tools were too soft and heavy to be very practical, and 2. The much more common iron was stronger and lighter, and much more suited for combat
And so they armed themselves, and prepared to attack the Pigman kingdom. However, before they could leave, one of their miners found another ore. Diamond. It was stronger and lighter than even iron, but was much rarer. As such, only nine Ancients were given swords made out of it. Three more diamonds were used to make a pickaxe. As the Ancients made to leave again, a group of miners told them they had gathered one stack of a black stone that could only be broken using a diamond pickaxe. They believed this could help greatly.

Chapter 2
The Ancients, after traveling for two days, arrived back at the Pigman castle. Without announcing their presence or intentions, they attempted to attack the castle. As the Pigmen realized what was happening, the Ancients had already reached the outer wall, and were attempting to destroy it. To prevent this, the Pigman army faced them in direct combat. While the Ancients had the superior weapons, the Pigmen had greater numbers, as well as the magical golden apples. Golden apples, when eaten, would bestow beneficial effects, including absorption and regeneration. Thus, the two armies were evenly matched for an amount of time. During the battle, the nine Ancients wielding diamond swords managed to get inside the walls, and began seeking out the Pigman king. The king, as it would happen, was waiting for this. Inside the central keep, the group of Ancients found and confronted the Pigman king. With neither side willing to back down, it came to fighting -- and, despite the Pigman king being alone, he was more than a match for the Ancients. He was a skilled lightning user, and used his ability to its fullest extent. The Ancients, as a last resort, used the black stone, obsidian. Having no real strategy, they placed it haphazardly around the room, attempting to impede the king. However, by some sort of coincidence, several blocks were aligned in a manner that would allow a portal to be created, if fire made contact with it. The Pigman king noticed this, and wasted no time. He summoned a lightning bolt to strike the portal frame, opening the portal. Due to an ancient spell, the entire Pigman race would be affected by this portal, and warped through it no matter their location. And so, by any amount of luck, the Pigmen were still very much alive, but had simply left this world, and moved on to the next.
Except the Pigman king. He needed only create the portal, and his race would be saved. But he took it a step further, and, seconds after the portal opened, performed the strongest, and final, lightning attack ever seen. The force of it blew apart the central keep, destroyed the portal, showered the areas nearby with gold blocks, and ended the battle.

Chapter 3
After the battle, the Ancients rushed to the central keep to search for their nine leaders. At first, there was no evidence of their survival. However, soon after they began searching, one of the leaders rose from a pile of gold blocks, and announced that he was still very much alive, and that the Pigman king was smashed. (...Do we still use 'smashed' here?)
Following this, one by one, the other eight also regained consciousness, and, when all nine were awake, they were declared kings of what used to be the Pigman Kingdom. Furthermore, the first to reawaken was given the title of "Great King", and as such had power over even the other eight.
Several weeks afterward, the Ancients had risen to the position of supreme power that the Pigmen had previously held, and had destroyed the Pigmen's gold castle, and rebuilt it with non-precious blocks. Additionally, the nine kings had ordered for several groups to be sent out, and, if any Pigmen villages were found, to destroy and rebuild the villages as well. This worked surprisingly well, and, as the groups often populated the villages, the kings' area of influence was increased accordingly.
The only resistance to this were the giant spiders that the Pigmen had warned them about, though the Ancients, now having plentiful resources, were able to not only fight them off, but also prevent them from returning.
And so the world was at peace.
Except one thing: the Pigmen. Though they doubted the Pigmen could or would return, the kings still wondered if they (the Pigmen) would attempt to exact revenge. And so they appointed a trio of royal scientists, and several others to work under them. These scientists performed numerous experiments with the black stone and fire or lightning, attempting to recreate the shape the Pigman king's portal was in. Eventually they succeeded, by creating a fire in the inside of a large rectangle. This opened a purple rift, identical to the one created by the Pigman king.
As agreed to by the trio, they all entered simultaneously, unarmed. It is debatable whether this was a mistake or not, as several things were caused by this, and equal amounts of them could be considered good and bad.

The three Ancients emerged into a world that the description of which would be lost to time. It would be changed forever, and the Pigmen who were there before the change would be left unable to tell of it. The Ancients would also be unable to speak of it, mostly due to complications that would arise. But that happens later, as does the change itself. Upon their arrival, they were greeted by the Pigmen, who offered rest and comfort. The Pigmen were noticeably poorer, as their buildings now only partially consisted of gold, and the Pigmen ate golden carrots, as opposed to the magical golden apples they ate before. But lack of gold was not their only problem. Though the spiders were not present in this dimension, there were large, white, floating creatures that resembled balloons, that spat fireballs at any nearby Pigmen. These fireballs could be deflected with a sword, and was yet still possible to hit the creature with the fireball, smashing (?) it. The Pigmen explained all this to the Ancients, over food and magic potions, in a castle. The Ancients, being sympathetic and regretting that they ever attacked the Pigmen, offered to give supplies, including gold, to the Pigmen using the new portal.
However, before they could respond, five other Pigmen dressed in red entered the room, and introduced themselves as the Fire Sages, a council of Pigmen who had control not only over lightning, but over fire as well. They claimed to be intent on avenging the Pigman King, and attacked the three Ancients. The Ancients, being unarmed, could not defend themselves -- when suddenly, a transformation took place. Likely due to the unstable nature of the newly-created portal, the three Ancients merged into a single creature, a beast with three heads. Extra chapter or something I guess
Okay actually it was a really bad idea to just randomly introduce the Fire Sages and say "some Pigmen have fire magic" so here's a more detailed explanation.
About half of all Pigmen born have lightning magic, but a very small number of the Pigmen with lightning magic also have fire magic. Before the events of this story, another group of five Pigmen with fire magic united all the Pigmen villages around the world into the Pigman Kingdom, but, instead of ruling it themselves, they chose a king from a large Pigman village near the center of the kingdom. Afterward, they created a council, and became the Fire Sages. From then, anytime a Pigman was born with fire magic, they became a Fire Sage once they reached a certain age. The Fire Sages also performed coronations and various other official acts.

Fire and lava were everywhere, and the once firm terrain was now brittle, breaking quickly if punched or mined, not to mention fireballed by one of the floating creatures. Stone was one of the few materials that could stand up to them properly, but, as the dimension was now devoid of stone, it would have to be brought in from the other world. This was not a problem, though. After the first three researchers failed to return, the rest of the group entered once an hour had passed. As the portal's twin had been destroyed, frame and all, by the researchers in their monster form, a new portal appeared when the group entered. As they looked around, they came the conclusion that the dimension was completely uninhabitable. Between the Pigmen, the floating creatures, the fire and lava, and the lack of shelter, the researchers decided that they should probably go back.
But they couldn't. At that moment, one of the floating creatures spat a fireball at the portal, destroying the portal, but leaving the frame undamaged. Thus the research team was trapped in an inhospitable dimension, with no way to call for help. But, they got by. Through experimentation, they found a way to smelt the brittle terrain into sturdy bricks, and used the bricks to construct fortresses. Large, sprawling fortresses, over lakes of lava, under hills... Though they were not defended enough. The group of Ancients had a stone sword each, but this was inadequate. Using several techniques, they constructed creatures of fire, mechanical beings who would defend their fortresses. The creatures were named Blazes, and were composed of a cloud of smoke, and a head and several rods made of fire. Eventually, more and more people entered the dimension. And eventually, they tried constructing portals in other places. This led to the discovery that one yard/meter in the other dimension, was equal to roughly seven yards/meters in the Ancients' Kingdom.
