That's a hard one! There are so many great sets to choose from.
In my personal collection, my favorite is the 9516 Jabba's Palace from 2012. 1) It is a great display piece, I absolutely love having it on display in my room. 2) You got the new Jabba BigFig (which looks awesome) and the new Han Solo in Carbonite piece, which still looks great today even with the improvements on Han's hair piece. 3) It is the first set I got where I really got into collecting Lego SW sets, so it is nostalgic to me.
Objectively, I think the UCS Slave I is an amazing model. It looks gorgeous, the Boba Fett minifig is outright stunning, and it isn't to expensive for a UCS Set (the Death Star is $300 more)
I have the 2016 UCS Death Star and I love that set too, because it was my first UCS model.
2008 Death Star set because it was the first play Death Star or the Cloud City set.
from my collection- 2011 Millenium falcon or. the 2013 republic gunship because it has padme (geonosis) and a skin tone Padawan Anakin.
Ah, the 2008 Death Star. Quite a large set if you ask me...
The 2008 and 2016 Death Stars are practically the same excluding the minifigs and minor detail differences, and I love the 2016 Death Star! It is big, but it is an awesome display piece!

I never had a chance to own either of them so I wouldn't know which one is better.

I mean, it is also currently on the market, not sold on some external site like ebay or Bricklink like the 2008 one. I guess it is up to the person which is better, but I was gifted with the 2016 so I'm a little more partial to that one

I have never owned a star wars set so I probably wouldn't pay £200+ just for a LEGO Death Star...

Oh i totally agree. It's not a set to buy as a first star wars set That is my first UCS set and I have been collecting LSW sets since 2009
