They, with their sticks and stones, were able to take out armoured Stormtroopers.
It's called guerrilla warfare. And it was this type of insurgency that gave the Brits a lot of trouble during the Boer War. And in the case of the Ewoks, they were backed up by a military. So it is quite possibly that the natives and friends could "defeat" the invading Empire. After all, the Empire is spread rather thinly across the Galaxy. <- That is why the Boer's were able to fight for so long.
Doesn't take away from the fact that Ewoks look a Teddy Bear's Picnic.
